Chicken with Peppers – Pollo con i Peperoni

This recipe is simple, but it’s really mouthwatering.  Chicken with bell peppers, or  ” Sora Lella Chicken ,” is a tasty main course.  It takes its name from the renowned sister of a famous Italian actor Aldo Fabrizi (1905-1990). She used to prepare this recipe in her trattoria in Rome (video). It’s a tasty dish that you can enjoy with basmati rice, potatoes (mashed or roasted) or polenta. The addition of (peperoncino) chilli pepper not only adds flavor, but it is beneficial to your health. photos coco zordan

NOTE: This is my simplified version. The original recipe calls for cooking the chicken and the vegetables in two different pans but I found out you can put all ingredients in one pan and save time and have one less pan to wash : ) 

The Recipe

Ingredients

  • 1/2 chicken cut into pieces 1 1/2 lb.

  • XV olive oil 4 tbs.

  • salt (about 2 tsp) to taste

  • fresh rosemary 1 sprig

  • opt. hot chili pepper or freshly ground black pepper to taste

  • onion 1

  • 1 clove of garlic

  • bell peppers (red,orange,yellow) 2

  • opt. white dry wine 1 cup

  • canned tomato sauce 1 cup

Wash peppers, cut in half, remove the seeds and white filaments. Cut into pieces of approx. cm 3 long  (about 1 inch) and 1/3 ‘  width. Cut onions in thick slices. In a large pan  over medium-low add 3-4 tbs of XVOO, add peppers, onions, rosemary sprig, and the chicken pieces.

Cook covered for about 30 minutes on low/med. Add wine (not shown) and let evaporate uncovered. Season with salt, and pepper.

Add tomatoes and salt, and cook with the lid on for approx. more 15 minutes. If necessary add some water.

When chicken is done serve warm with your favorite grains or potatoes.
