Best No-Bake Cheesecake with Wild Berries

Ingredients
- crust
graham cracker crumbs 1 box (gr. 300)
butter melted 1/3 cup (gr. 100)
- filling
ground cinnamon (opt) 1/2 tbs.
cream cheese 20 oz (gr. 580)
lemon juice 2 tsp (ml. 15)
heavy whipping cream 1 pint (2 cups)
white sugar 1/3 cup (gr. 90)
- topping
gelatine 1 packet
fresh berries (strawberries,raspberries,blueberries) 1 or 2 cups
wild berry jam (or of your choice) 1 small jar (250 grams)
water 1 cup
white sugar 3-4 tbs.
Directions
In a medium bowl, beat together the cream cheese and lemon juice until soft. Add whipping cream and beat with an electric mixer until batter becomes thick. Add the sugar and continue to beat until stiff.
Pour the filling on the crust and store in the fridge to chill for at least 3 hours.
In a small pot mix sugar (3-4 tbs), gelatine and 1 cup of water (or follow the gelatine instructions) add jam and let simmer till jam has melted. Refrigerate at least 3 hours before using.
Remove crust with filling from the fridge add gelatin and arrange fruit. Chill for several hours.
Just before serving, remove the sides of the springform pan.
