Fava Bean Puree'

The  fava bean puree’ is  a traditional recipe from Apulia (South of Italy) a typical farmer dish: healthy, rich in proteins and absolutely irresistible.

The Recipe

Servings

one big bowl for 8 people

Ingredients

  • dry skinless fava beans 1 cup

  • water 2 + 1/2 cups

  • x-vergine olive oil 1/4 cup

  • chopped basil o italian parsley or cilantro 1/4 cup

  • top
  • x-vergin olive oil

  • chopped scallion

  • sesame seeds

  • salt + pepper (or peperoncino)

Directions

Put the beans in cold water. Let them simmer till very soft, mushy. Put them in a food processor with the basil , 1/2 of the olive oil, and salt. Process for 2 minutes.

Refrigerate. Serve with more olive oil, chopped scallion, sesame seeds,pepper, etc. Make it beautiful : )It may last in the fridge up to a week or in the freezer  up to  4 months.
