dry skinless fava beans 1 cup
water 2 + 1/2 cups
x-vergine olive oil 1/4 cup
chopped basil o italian parsley or cilantro 1/4 cup
x-vergin olive oil
chopped scallion
sesame seeds
salt + pepper (or peperoncino)
Put the beans in cold water. Let them simmer till very soft, mushy. Put them in a food processor with the basil , 1/2 of the olive oil, and salt. Process for 2 minutes.
Refrigerate. Serve with more olive oil, chopped scallion, sesame seeds,pepper, etc. Make it beautiful : )It may last in the fridge up to a week or in the freezer up to 4 months.
