Quick Tomato Sauce

You bought too many tomatoes and now they’re overripe … what to do? cut the tomatoes into small pieces, heat some olive oil,add garlic, some basil and  voila’ you have a delicious fresh tomato sauce for your pasta dish or on a bruschetta bread. photos by coco zordan

Ingredients

  • plum or Roma tomatoes 2/4 lb.

  • extra-vergin olive oil 4 tbs.

  • garlic 2 cloves

  • fresh basil 6/10 leaves

  • salt and pepper or paprika to taste

The quality of the ingredients is very important: pick ripe tomatoes, possibly at your local Farmers’ Market. Wash the tomatoes,cut them in half, remove stem.

cut them in thick pieces, add them to oil and garlic in the pan. Add basil.

Let it cook till the sauce dries up (10/15 minutes) At the end  add salt (pepper,paprika) to taste. Use on pasta or bruschetta bread!
