Agrodolce Winter Salad – Fennel Salad with Grapefruit Pomegranate Walnuts

Ingredients
- for 2 people
1 fennel
1/2 grapefruit
1/4 c walnuts
2 Tbs pomegranate seeds
(opt.) black sesame seeds or poppy seeds as decoration
- dressing
vinaigrette (mustard,vinegar,XV olive oil)
or mediterranean dressing (XV Olive Oil, lemon juice, sea salt, freshly ground black pepper)

Preparation
Fennels: wash and eliminate the hard outside part of the fennels, with a mandolin slice finely and add to a bowl
Grapefruit: remove top and bottom, peel by removing also the white skin inside, cut in thick slices and then and in small chunks, add to fennel
Pomegranate: in a bowl of water open and hull the pomegranate, drizzle seeds on the fennels, add the walnuts
Dressing: Mix well and pour your favorite dressing sauce on the salad. Either with lemon, olive oil, salt and pepper or with vinaigrette sauce. (you can serve on a bed of lettuce or arugula).
