Chickpea Burgers with Couscous and Spinach

Ingredients
cooked chick peas 1/2 lb (1 small can)
cooked spinach 1/2 lb
couscous 1 cup
water or broth for the couscous 2 cups
bread crumbs or grated parmigiano cheese if needed
sage,rosemary and thyme (or basil + italian parsley)chopped to taste
salt and pepper to taste
Directions
COUS COUS:Put water to boil, add 1 tsp. salt, 1 tbs. oil. When the water starts to boil add cous cous, stir,cover with lid and remove from the stove. let it rest for 10 minutes.
Add the garbanzo beans (cooked and drained) and mash it all with a fork.
Chop the cooked spinach and add it to the mixture. Mix well and season with salt,pepper and herbs.
Take a small ball amount from the mixture and shape into a flat burger. If the mixture is wet add some grated cheese or bread crumbs.
Put the burgers on a tray and into the oven at 4oo* for about 20 minutes or till golden brown.
Delicious alone they can also be served with cheese, fava bean dip or prosciutto.
