Today, Sunday, is a grey rainy kind of a day. That kind of day that calls for a cup of hot tea and comfort food. This is a traditional, old style, grand-ma semolina pudding, it’s frugal and easy to make with just 3 main ingredients.
Ingredients
1 cup + 1 Tbs. (g. 140) semolina flour
2 c. (g. 500) whole milk
2 Tbs. (g. 50) sugar
1/2 c. (g.50) raisin
lemon zest
vanilla extract
butter for the baking pan
Directions
butter and flour your pan
warm milk with lemon zest (you can also add grated zest) extract and sugar
remove zest slices and add slowly flour to the warm milk
when the batter starts to harden, simmer for a couple of minutes, turn gas off and add raisin, mix well (opt. add 1 or 2 tsp of butter)
pour hot batter into the pan
bake at 350 F for about 30 minutes or until golden brown. Let cool down and refrigerate before serving
