Grey Poupon Dijon Mustard 2 tbs
Olive oil 1 cup
plain red vinegar 2 tbs
water 3 tbs
oregano (opt.) a pinch (add at the end)
In a bowl mix vinegar and mustard well. Add a bit of oil and whisk till absorbed by the emulsion. Add more oil and whisk till absorbed. Repeat till all oil is incorporated and the emulsion looks like a mayonnaise. Add water to make it easier to pour. If you like to add some dry oregano do so at the end when you have stopped mixing. Oregano can become bitter if whisked.
